Ingredients
Crust:
- 2 1/2 cups graham cracker crumbs (about 2 sleeves)
- 1/2 cup unsalted butter, melted
Layers:
- 2 cups powdered sugar, sifted
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 8 oz Cool Whip (fat-free)
- 20 oz crushed pineapple, well-drained
Instructions
- Prepare the Crust:
Combine the graham cracker crumbs and melted butter in a bowl, stirring until fully mixed. Press 2 cups of the mixture into the bottom of a 9×9-inch square baking dish. Use the bottom of a flat cup to pack it down firmly. Bake the crust in a preheated 300°F oven for 8-10 minutes. Let it cool. - Make the Cream Layer:
In a large bowl, beat the softened butter and cream cheese with a mixer until smooth. Gradually add the powdered sugar, one cup at a time, beating on low speed at first, then on high for 1 minute until fluffy. Mix in a spoonful of dried, chopped pineapple. Spread this creamy layer evenly over the cooled crust. - Top it Off:
Gently fold the remaining pineapple into the Cool Whip. Spread this mixture evenly over the cream layer. Sprinkle the remaining graham cracker crumbs on top. - Chill and Serve:
Refrigerate for at least 4 hours before serving to allow the dessert to set.
Enjoy this deliciously easy, tropical-inspired treat!
