Pesto Turkey Pinwheels with Smoked Provolone

These Pesto Turkey Pinwheels are a fresh, flavorful twist on your classic turkey sandwich. Perfect for lunch, a party platter, or a simple snack, they’re made with smoked provolone, deli turkey, and a creamy pesto cream cheese spread that will have everyone coming back for more!

Why You’ll Love These Pinwheels:

  • Super quick and easy: Prep in just 15 minutes.
  • Perfect for any occasion: Great for lunchboxes, appetizers, or a snack.
  • Fresh and flavorful: Packed with basil, spinach, and parmesan for a tasty bite every time.
  • Customizable: Add sun-dried tomatoes, roasted red peppers, or a drizzle of balsamic glaze for extra flavor.

Ingredients:

For the Pesto:

  • 1 cup fresh basil
  • 1/4 cup pine nuts or walnuts
  • 1 large handful baby spinach
  • 1 garlic clove
  • 1/4 cup olive oil
  • Juice of 1/2 lemon
  • 2 Tbsp grated parmesan
  • 1/2 tsp pepper
  • 1/2 tsp sea salt

For the Pinwheels:

  • 3 oz cream cheese, softened
  • 4 slices oven-roasted turkey breast, medium thickness
  • 4 slices smoked provolone
  • 2 10-inch tortillas

Instructions:

  1. Make the pesto: In a food processor, combine basil, spinach, garlic, lemon juice, and parmesan. Process until smooth. Slowly add olive oil until the pesto reaches desired consistency. Season with salt and pepper.
  2. Mix cream cheese with pesto: Transfer 1/4 cup of pesto to a bowl with cream cheese and stir until smooth.
  3. Assemble pinwheels: Spread half the cream cheese mixture on a tortilla, leaving about 1 inch around the edges. Layer turkey and provolone on top. Roll tightly.
  4. Optional chilling: Wrap in plastic and chill 30 minutes for easier slicing. Slice into bite-sized pinwheels and serve!

Tips & Notes:

  • Use pre-made pesto to save time—fresh is best for color and flavor.
  • Don’t spread the cream cheese to the edges; leave room to roll tightly without spilling.
  • Roll the tortillas very tight so the pinwheels hold together.
  • Try adding extras like spinach, sun-dried tomatoes, or balsamic glaze for more flavor.

These pinwheels are light, fresh, and perfect for any occasion—a creative and tasty way to enjoy turkey without the usual sandwich routine.
