Perfectly Fluffy Pancakes

This is the best pancake recipe to make from scratch—fluffy, simple, and oh-so-easy!

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar (or adjust to taste)
  • 4 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¾ cups milk (adjust as needed)
  • 2 large eggs
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla.
  2. In a separate bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
  3. Make a well in the dry ingredients, then pour in the wet mixture. Stir gently until just combined—it’s okay if the batter is a little lumpy.
  4. Preheat a griddle or frying pan over medium heat (or to 350°F). Lightly grease with butter or oil.
  5. Pour about ¼ cup of batter onto the griddle for each pancake. Cook for around 2 minutes, or until bubbles form and start to pop, then flip and cook for another 1-2 minutes until golden brown on both sides.
  6. Serve immediately or keep warm in the oven, and repeat with the remaining batter.
