Peaches and Cream Cake πŸ‘πŸ°

Ingredients:

  • 2/3 cup white sugar (scant)
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1/3 cup melted butter
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 6 Tbsp whole milk (at room temperature)
  • 6-7 fresh or canned peaches

Instructions:

  1. Preheat the oven to 350Β°F (175Β°C). Grease a round 8 or 9-inch cake pan with butter or oil, sprinkle with brown sugar, line the bottom with parchment paper, and cover the outside with tin foil.
  2. In a large bowl, whisk together the eggs, sugar, vanilla, and melted butter with a hand mixer until foamy and pale, about 3-4 minutes.
  3. Stir in the flour and baking powder until just combined.
  4. Gradually pour in the milk, then fold in the peach chunks.
  5. Pour the batter into the prepared pan and bake for 55 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool completely before refrigerating overnight. Slice and enjoy!
