Paleo, Keto & Sugar-Free No-Bake Cookies

Ingredients

  • 1 cup almond butter (or peanut butter, but not paleo)
  • ½ cup Lakanto maple syrup flavored monkfruit (or pure maple syrup for paleo)
  • ½ cup coconut oil
  • 5 tablespoons raw cacao powder
  • 1 tablespoon vanilla extract
  • 2 ½ cups shredded coconut (or gluten-free oats, not paleo or low-carb)

Instructions

  1. Melt the Base: In a medium saucepan over medium-low heat, combine almond butter, syrup, coconut oil, cacao, and vanilla. Stir continuously until melted and smooth.
  2. Add Coconut: Remove from heat, then fold in the shredded coconut until well combined and no clumps remain.
  3. Cool: Let the mixture cool for 20–30 minutes until it thickens, stirring occasionally to speed up the process.
  4. Form Cookies: Scoop portions of the mixture onto a parchment-lined cookie sheet using a large spoon.
  5. Set: Refrigerate for 1 hour or freeze for 20 minutes until firm.
  6. Store: Keep cookies in a sealed container in the refrigerator. They must stay cold or they’ll melt!

Tips & Notes

  • Use parchment paper to prevent sticking and make removing cookies easy.
  • Store cookies in the fridge for up to 1 week or freeze for up to 1 month.
  • Substitutions: Use oats or chopped nuts if you dislike coconut (note that oats are not paleo or low-carb).
  • These cookies have ~4 net carbs each and are fudgy thanks to the lack of refined sugar.
  • If cookies soften too much at room temperature, place them in the freezer until firm.
