  3. Make Béchamel: Melt butter, whisk in flour, then gradually add milk until thickened. Remove from heat and stir in egg yolks, nutmeg, and cheese.
  4. Assemble: Layer potatoes, eggplant, zucchini, and more eggplant in a greased baking dish, seasoning and sprinkling cheese between layers. Spread meat sauce over vegetables, then top with béchamel sauce.
  5. Bake: Cook in a 165°C (330°F fan) oven for 40–45 minutes until golden and bubbly. Let rest 30 minutes before slicing for perfect layers.
