One Pot Chicken Bacon Ranch Pasta

Ingredients:

  • 2 medium sweet potatoes
  • 1 teaspoon olive oil
  • 1 ¼ teaspoons ground cumin (divided)
  • ¼ + ⅛ teaspoon salt
  • ¼ + ⅛ teaspoon ground pepper
  • ¾ lb lean ground turkey (93%)
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 ¼ cups canned crushed tomatoes
  • ¼ cup grated pepper jack cheese
  • 2 tablespoons minced flat-leaf parsley

Instructions:

  1. Pierce the sweet potatoes with a fork and microwave on HIGH for 4-5 minutes per side until tender. Let cool slightly.
  2. Cut each potato in half lengthwise and carefully scoop out the flesh into a bowl, reserving the skins. Mash the sweet potato with olive oil, ½ teaspoon cumin, ¼ teaspoon salt, and ¼ teaspoon pepper. Stuff the mashed mixture back into the potato skins and place them on a baking sheet.
  3. Heat a nonstick skillet over medium-high heat. Coat lightly with cooking spray. Add ground turkey and cook until fully browned, breaking it up with a wooden spoon. Stir in garlic, chili powder, ¾ teaspoon cumin, oregano, paprika, and remaining salt and pepper. Cook for 1 minute, then stir in crushed tomatoes.
  4. Preheat the broiler. Fill each sweet potato skin with the turkey mixture and top with grated cheese. Broil for about 30 seconds until the cheese melts.
  5. Garnish with parsley and serve!
