Ingredients

  • 1 lb. ground beef
  • 2 tsp dried oregano (divided)
  • 2 tsp dried thyme (divided)
  • 6 Tbsp butter
  • 1 cup onion, diced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 5 cloves garlic, minced
  • 4 Tbsp flour
  • 8 cups chicken broth
  • 8 oz elbow macaroni
  • 1 cup heavy cream
  • 8 oz sharp cheddar cheese, shredded
  • 1 tsp white balsamic vinegar
  • Salt & pepper, to taste

For croutons:

  • 4 sesame seed buns, cubed
  • 2 Tbsp olive oil

For garnish:

  • Green onions, sliced
  • Extra cheddar cheese

Instructions

  1. Heat oven to 400°F. Toss bun cubes with olive oil, bake 10 minutes until golden.
  2. In a large pot, brown beef with 1 tsp oregano, 1 tsp thyme, salt, and pepper. Remove.
  3. Melt butter in the same pot. Add onion, carrots, celery, salt, and pepper. Cook 10 minutes.
  4. Stir in garlic, remaining oregano & thyme. Cook 1 minute.
  5. Add flour, stir 1 minute. Deglaze with a splash of broth.
  6. Add remaining broth and macaroni. Simmer 5–7 minutes until pasta is al dente.
  7. Remove from heat. Stir in cream, cheese, vinegar, and cooked beef.
  8. Season to taste. Serve hot with croutons, green onions, and cheese.
