What Is Swiss Steak?

Despite the name, this dish is not Swiss at all. The term “Swiss” refers to swissing — a method of tenderizing meat by pounding it or running it through a machine to soften it.

Traditionally made with inexpensive cuts like cube or round steak, Swiss Steak is:

✔ Slowly cooked
✔ Packed with flavor
✔ Melt-in-your-mouth tender

Why You’ll Love This Recipe

  • Budget-Friendly: Uses affordable beef and pantry staples.
  • Classic Comfort: Cozy, hearty, and nostalgic — just like Grandma made.
  • Make-Ahead Friendly: The flavor gets even better the next day.
  • Versatile Serving Options: Delicious with potatoes, rice, or noodles.
  • Adaptable Cooking Methods: Oven, stovetop, or slow cooker — your choice!

Ingredients You’ll Need

  • Cube or round steak — thin, tenderized cuts work best
  • Flour + seasonings — for coating and browning
  • Onion, celery, bell pepper, mushrooms — savory flavor and texture
  • Garlic + tomato paste — deepens the sauce
  • Diced tomatoes + beef broth — builds a rich gravy base
  • Worcestershire sauce + thyme — adds a savory punch
  • Cornstarch slurry — optional thickener if needed

How to Make Old-Fashioned Swiss Steak

1. Dredge & Brown the Meat

Coat steak pieces in seasoned flour, then brown them in oil until golden. This step builds incredible flavor.

2. Sauté the Vegetables

Remove steak, then cook onions, bell pepper, celery, and mushrooms in the same pot. Add garlic and tomato paste — cook briefly to caramelize.

3. Build the Sauce

Stir in diced tomatoes, broth, Worcestershire, thyme, and a pinch of sugar to balance acidity. Scrape up any browned bits — that’s flavor gold!

4. Simmer Low & Slow

Return the steak to the pot, making sure it’s submerged.
Cover and cook in the oven (or on the stove) until fork-tender — 1½ to 2 hours.

5. Thicken If Needed

If the sauce seems thin, stir in a cornstarch slurry and simmer until thickened.

6. Serve & Enjoy

Dish it up over mashed potatoes, noodles, or rice. Cozy comfort is served.

Helpful Tips

  • Take time to brown the meat — it greatly boosts flavor.
  • If the meat isn’t tender enough, keep cooking — time does the work.
  • Don’t skip the sugar — it balances tomato acidity.
  • Leftovers reheat beautifully and freeze well for later.
