Old-Fashioned Beef Stew

Nothing beats the warmth and satisfaction of a hearty, homemade beef stew, and our Old-Fashioned Beef Stew takes it to the next level. This recipe uses a two-step cornstarch process to create the perfect, velvety thickness that complements the rich flavors. The real secret, however, lies in the combination of allspice, paprika, and Worcestershire sauce, giving this stew a depth and complexity that makes it stand out from traditional versions. The addition of pearl onions brings a burst of sweetness and texture, transforming this dish into true comfort food.

Why You’ll Love This Recipe:

  • The two-stage cornstarch process ensures a perfectly thickened stew every time.
  • A unique blend of allspice, paprika, and Worcestershire sauce creates a deep, savory flavor that sets this stew apart.
  • Pearl onions add a touch of sweetness and texture that’s often missing in other recipes.

Perfect for Comfort Food Lovers
Although the recipe takes about 2 hours from start to finish, the majority of the time is spent preparing the ingredients. Once your vegetables are chopped, it’s simply a matter of simmering everything until it’s melt-in-your-mouth tender. This stew is the ultimate go-to dish when you need something comforting and soul-satisfying.

Ingredients:

  • Beef Stew Meat: For the best results, use pre-cut stew meat or cut your own chuck roast into 1-2 inch cubes.
  • Cornstarch: Used in two stages to ensure the right consistency.
  • Olive Oil: Use olive oil or any neutral oil such as vegetable or canola oil.
  • Garlic: Freshly minced garlic provides the best flavor.
  • Beef Broth: Opt for a low-sodium beef broth to keep the flavors balanced.
  • Red Potatoes: These hold their shape well when cooked, making them ideal for stews.
  • Pearl Onions: Frozen pearl onions are the most convenient option. If unavailable, substitute with chopped regular onions.
  • Carrots & Celery: Classic stew vegetables that add richness and crunch.
  • Granulated Sugar: A touch of sugar balances the acidity of the broth.
  • Spices: Allspice, paprika, basil, oregano, parsley, and salt elevate the flavor profile.

Instructions:

  1. Prepare the Meat: Dust the beef stew meat with 2 tablespoons of cornstarch and season with salt and pepper.
  2. Brown the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned beef and sear for about 5 minutes until browned on all sides. Stir frequently to ensure even browning.
  3. Add Garlic & Tomato Paste: Stir in the minced garlic and tomato paste. Cook for 1-2 minutes until fragrant.
  4. Deglaze the Pot: Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.
  5. Add Vegetables & Spices: Add the diced potatoes, pearl onions, carrots, and celery to the pot. Sprinkle in sugar, basil, oregano, parsley, paprika, and allspice. Stir to combine.
  6. Simmer: Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 90 to 120 minutes, stirring occasionally, until the beef is tender.
  7. Thicken the Stew: In a small bowl, mix the remaining 2 tablespoons of cornstarch with 1/4 cup cold water until dissolved. Gradually pour this slurry into the stew, stirring constantly. Continue to cook on low until the stew thickens.
  8. Adjust Seasoning: Taste the stew and adjust the seasoning with more salt and pepper if needed.
  9. Serve: Serve hot, ideally with a side of homemade French bread or cornbread for dipping.

Storage & Reheating:

  • Refrigeration: Cool the stew to room temperature, then store it in an airtight container in the refrigerator for 3-4 days. Reheat on the stove over medium heat, adding a little water or broth as needed.
  • Freezing: For longer storage, freeze the stew in an airtight container or resealable freezer bag for up to 3 months. Thaw in the fridge overnight and reheat on the stove.
