Oat & Quark Protein Bread (No Yeast, High Protein)

I wanted a protein-packed bread that’s loaded with healthy ingredients, quick to make, yeast-free, and unbelievably delicious. That’s how this oat & quark bread was born! In just 40 minutes, you’ll have a hearty, moist loaf full of natural protein – no protein powder required. Since then, it has become my go-to breakfast staple!

Ingredients (for 1 loaf)

  • 100 g rolled oats
  • 100 g spelt flour (or wheat flour)
  • 50 g almond flour (or replace with more spelt flour)
  • 15 g flaxseeds
  • 1 packet baking powder
  • 1 egg
  • 250 g low-fat quark (or skyr)
  • 1 tsp salt

Instructions

  1. Preheat oven to 170°C (340°F, fan) and line a baking sheet with parchment paper.
  2. In one bowl, mix all dry ingredients (oats, flour, almond flour, flaxseeds, baking powder, salt).
  3. In another bowl, whisk together the wet ingredients (egg and quark).
  4. Combine wet and dry ingredients, mixing into a dough.
  5. Shape into a loaf and place on the prepared baking sheet.
  6. Brush with a little water and sprinkle extra oats or seeds on top.
  7. Bake for 35 minutes until golden and cooked through.
  8. Let cool slightly before slicing.

Notes & Storage

  • No almond flour? Simply replace with more spelt flour.
  • Shelf life: 4–5 days in the fridge, airtight.
  • Freezer-friendly: Slice before freezing; toast slices straight from frozen.
  • One loaf makes about 10 slices. Each slice: ~132 kcal & 9 g protein.
