Ingredients (for 1 loaf)
- 100 g rolled oats
- 100 g spelt flour (or wheat flour)
- 50 g almond flour (or replace with more spelt flour)
- 15 g flaxseeds
- 1 packet baking powder
- 1 egg
- 250 g low-fat quark (or skyr)
- 1 tsp salt
Instructions
- Preheat oven to 170°C (340°F, fan) and line a baking sheet with parchment paper.
- In one bowl, mix all dry ingredients (oats, flour, almond flour, flaxseeds, baking powder, salt).
- In another bowl, whisk together the wet ingredients (egg and quark).
- Combine wet and dry ingredients, mixing into a dough.
- Shape into a loaf and place on the prepared baking sheet.
- Brush with a little water and sprinkle extra oats or seeds on top.
- Bake for 35 minutes until golden and cooked through.
- Let cool slightly before slicing.
Notes & Storage
- No almond flour? Simply replace with more spelt flour.
- Shelf life: 4–5 days in the fridge, airtight.
- Freezer-friendly: Slice before freezing; toast slices straight from frozen.
- One loaf makes about 10 slices. Each slice: ~132 kcal & 9 g protein.
