Ingredients
For the Blue (Orange Mango) Gummies:
- 1 cup orange juice, divided
- 1/4 cup mango, puréed
- 1/4 cup grass-fed gelatin
- 1–2 tablespoons honey, optional
- 1 pinch blue spirulina powder*
For the Green (Peach Lemonade) Gummies:
- 1 cup lemonade (no sugar added)
- 1/4 cup peaches, puréed
- 1/4 cup grass-fed gelatin
- 1–2 tablespoons honey, optional
- 1 pinch matcha green tea powder*
For the Filling:
- 3/4 cup frozen strawberries
- 1/2 tablespoon arrowroot flour
- 1 1/2 tablespoons water
- Squeeze of lemon juice
*Note: You can use other natural colorants! Don’t worry—neither the matcha nor spirulina affects the flavor.
How to Make Them
1. Make the Filling:
- Thaw frozen strawberries (they release more juice when thawed).
- Blend with a squeeze of lemon juice until smooth.
- Warm the puree over low heat in a saucepan.
- Mix arrowroot and water separately until dissolved.
- Stir the arrowroot mixture into the warm berry puree—it will thicken slightly. Remove from heat and set aside.
2. Make the Gummies (Repeat for Each Color):
- In a bowl, whisk 1/2 cup juice with gelatin. It will form a thick gel (a “bloom”).
- Warm the puréed fruit and the remaining 1/2 cup juice on the stovetop.
- Stir in the bloomed gelatin until fully dissolved.
- If using colorants, dissolve spirulina or matcha in a splash of water first, then stir into the mixture until you reach your desired shade.
3. Assemble the Gummies:
- Pour or syringe the gummy mixture into the bottom half of your silicone mold.
- Refrigerate for about 20 minutes to set the base.
- Add the strawberry filling using a small spoon, piping bag, or syringe—just a small dollop in the center.
