Ingredients

For the Lentil Loaf

  • 1 cup dry green lentils
  • 4 cups water
  • 3 tablespoons flaxseed meal
  • 1/3 cup water
  • 1/2 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 small white or yellow onion, diced
  • 1 red bell pepper, finely diced
  • 1 carrot, finely diced
  • 1 jalapeño, seeded and diced (optional)
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon coriander
  • 1/2 cup gluten-free rolled oats
  • 1/2 cup gluten-free oat flour
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon salt
  • Freshly ground black pepper

For the Glaze

  • 1/2 cup ketchup
  • 1/2 teaspoon yellow mustard
  • 1/2 teaspoon apple cider vinegar or balsamic vinegar
  • 1/4 teaspoon chipotle chili powder (optional)

How to Make Vegetarian Lentil Loaf

1. Cook the Lentils

Rinse the lentils and place them in a large pot with 4 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for about 30 minutes until tender and most of the water is absorbed. Drain and set aside.

2. Prepare the Flax Egg

In a small bowl, mix flaxseed meal with 1/3 cup water. Place in the refrigerator to thicken while preparing the rest of the ingredients.

3. Preheat the Oven

Preheat oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.

4. Sauté the Vegetables

Heat olive oil in a large skillet over medium heat. Add garlic, onion, bell pepper, carrot, jalapeño, and cilantro. Sauté for 5–7 minutes until vegetables soften.

Add cumin, chili powder, paprika, garlic powder, onion powder, and coriander. Cook for another 30 seconds, then transfer to a large mixing bowl.

5. Blend the Lentils

Blend about 2 cups of the cooked lentils in a blender or food processor until partially smooth.

Add the blended lentils to the bowl with the sautéed vegetables, along with the remaining whole lentils.

6. Mix the Loaf

Stir in the rolled oats, oat flour, flax mixture, salt, and pepper. Mix well until combined.

7. Shape the Loaf

Transfer the mixture to the prepared loaf pan and press it down evenly.

8. Add the Glaze

In a small bowl, mix together ketchup, mustard, vinegar, and chipotle powder. Spread half of the glaze over the top of the loaf.

9. Bake

Bake for 45 minutes. Remove from the oven and spread the remaining glaze on top.

10. Cool & Serve

Let the loaf cool for 10–15 minutes before slicing. Serve with mashed potatoes, vegetables, or extra sauce.

Serves 6.


Storage and Freezing

This lentil loaf stores very well and is great for meal prep.

  • Refrigerator: Store leftovers in an airtight container for up to 4 days.
  • Freezer: Wrap tightly and freeze for up to 3 months.
