Moist Granny Cake with Coconut

Ingredients

For the Cake:

  • 1½ cups white sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 (20 oz) can crushed pineapples (with juice)
  • 1 cup brown sugar (for topping)
  • 1 cup chopped pecans (for topping)

For the Icing:

  • 1 cup evaporated milk
  • ½ cup white sugar
  • ½ cup (1 stick) unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with oil.
  2. Mix Dry Ingredients: In a large bowl, whisk together the white sugar, all-purpose flour, baking soda, and salt.
  3. Combine Ingredients: Add the eggs and crushed pineapples (with juice) to the dry ingredients. Mix gently with a spoon until the batter is smooth.
  4. Pour and Prepare for Baking: Pour the batter into the prepared baking dish. Sprinkle the top evenly with chopped pecans and brown sugar.
  5. Bake: Place the baking dish in the oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Prepare the Icing: In a small saucepan over medium heat, combine evaporated milk, white sugar, and butter. Bring to a boil, then remove from heat and stir in the vanilla extract.
  7. Saturate the Cake: Once the cake is done baking, remove it from the oven and prick the top all around the perimeter with a toothpick or bamboo skewer. This allows the icing to soak in.
  8. Ice the Cake: Pour the hot icing over the cake while it’s still warm, allowing it to seep into the pricked holes. Let the cake cool completely.
  9. Serve: Cut into pieces and enjoy the delicious moistness of this Granny Cake with every bite!
