Moist Apple Coffee Cake with Cream Cheese Layer and Streusel Topping

Ingredients

Cake

  • ½ cup (1 stick) butter, softened
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • ¼ cup vegetable oil
  • ½ tablespoon vanilla
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1½ cups small chopped apples

Cream Cheese Layer

  • 8 oz. cream cheese, softened
  • 1 teaspoon vanilla
  • 3 tablespoons white sugar

Streusel Topping

  • ¾ cup white sugar
  • ¼ cup brown sugar
  • ½ cup flour
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 6 tablespoons cold butter

Instructions

  1. Preheat the oven to 350°F and grease an 8×8-inch square pan.
  2. Make the Cake: In a large bowl, beat together the softened butter, brown sugar, and white sugar until fluffy. Add in the egg, oil, and vanilla, mixing until smooth. In a separate bowl, combine flour, baking soda, baking powder, salt, and cinnamon, then gradually mix into the butter mixture. Fold in the chopped apples and spread the batter evenly in the prepared pan.
  3. Prepare the Cream Cheese Layer: In a small bowl, blend the cream cheese, vanilla, and sugar until smooth. Spread evenly over the cake batter.
  4. Create the Streusel: In another bowl, mix the sugar, flour, cinnamon, baking powder, and salt. Cut in the cold butter with your hands or a pastry blender until the mixture resembles coarse crumbs. Sprinkle the streusel over the cream cheese layer.
  5. Bake for 45 minutes, or until the topping is golden brown. Allow to cool, then store in the refrigerator if needed.
