MEXICAN CASSEROLE

Cheesy Taco Casserole

Ingredients:

  • 1 pound lean ground beef
  • 1 can Ranch Style beans
  • 1 can Ro-Tel tomatoes
  • 1 small onion, chopped
  • 1 package taco seasoning
  • 1 can cream of chicken soup
  • 1/2 cup water
  • 1 (10-12 oz) bag of tortilla chips, crushed (use as much as needed)
  • 2 cups shredded cheddar cheese, divided
  • Sour cream and salsa for topping

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. In a large skillet, cook the ground beef until browned. Drain any excess fat.
  3. Stir in the beans, Ro-Tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water. Let the mixture simmer on medium-low heat until everything is well combined and heated through.
  4. Grease a 9×13-inch casserole dish. Start by spreading a layer of crushed tortilla chips at the bottom.
  5. Spoon half of the meat mixture over the chips, followed by half of the shredded cheddar cheese.
  6. Add another layer of crushed tortilla chips, the remaining meat mixture, and top with the rest of the cheese.
  7. Cover the casserole with foil and bake for 20-30 minutes or until bubbly and heated through.
  8. Once baked, let it sit for 5-10 minutes to set.
  9. Serve with a dollop of sour cream and a side of salsa for extra flavor.
