Lemon White Chocolate Truffles

Ingredients

  • 1 cup white chocolate chips (180 g)
  • 1/4 cup butter (60 g)
  • 1 big pinch salt
  • Zest of 2 lemons (about 2 tbsp)
  • 3 tbsp heavy whipping cream
  • 1 tsp vanilla paste or extract (optional)
  • 2-3 drops yellow food coloring (optional)
  • 1/4 cup powdered sugar (for rolling)
  • A few drops lemon extract

Instructions

  1. Prepare White Chocolate Base: Place white chocolate chips in a medium mixing bowl and set aside.
  2. Heat Lemon Mixture: In a small saucepan, melt the butter with salt and lemon zest. Add the heavy cream and heat until it’s just about to boil. Strain the hot cream mixture through a fine-mesh sieve directly over the white chocolate chips to remove the zest.
  3. Mix and Chill: Add vanilla paste or extract and food coloring (if using) to the white chocolate mixture. Stir until smooth. Cover and refrigerate for 30 minutes to 1 hour, or until firm enough to shape.
  4. Form Truffles: Scoop teaspoonfuls of the mixture and roll into balls. Coat each ball in powdered sugar. Chill truffles for at least 30 minutes before serving.
