Lazy Chicken Parmesan Grilled Cheese

Craving a Chicken Parmesan sub but don’t have time to cook and bread chicken? I’ve got a quick, simple solution for you! I cut some corners by using frozen breaded chicken patties and pre-prepared ingredients, making this sandwich a breeze to assemble. To keep it lighter, I swapped out the sub rolls for sliced Italian bread and used thin-sliced provolone cheese. The result was surprisingly delicious, and I couldn’t wait to share it with you!

Quick & Easy Chicken Parmesan Sandwich

Ingredients:

  • 2 frozen breaded chicken patties (e.g., Tyson®)
  • 2 tablespoons garlic butter (or to taste)
  • 4 slices Italian bread
  • 1 cup marinara sauce
  • ½ teaspoon dried basil (or to taste)
  • 1 pinch garlic salt (or to taste)
  • 6 thin slices provolone cheese
  • 2 tablespoons shredded Parmesan cheese

Directions:

  1. Preheat oven to 400°F (200°C). Place the chicken patties on a baking sheet and bake for 20 minutes or until crispy and fully cooked. After baking, cut each chicken patty in half lengthwise.
  2. Spread garlic butter on one side of each bread slice.
  3. Prepare marinara sauce: In a microwave-safe bowl, mix the marinara sauce, basil, and garlic salt. Heat in the microwave for 30 seconds to 1 minute, then stir well.
  4. Assemble the sandwich: Heat a skillet over medium heat. Place one slice of bread, butter-side down, into the skillet. Top with 2 slices of provolone cheese, 1 tablespoon of marinara sauce, 2 chicken patty halves (overlapping to cover the bread), 2 tablespoons of marinara sauce, 1 slice of provolone cheese, and the second slice of bread, butter-side up.
  5. Cook: Grill the sandwich for 2 to 3 minutes per side, until the bread is crispy and the cheese is melted. Repeat with the remaining ingredients.
  6. Serve: Sprinkle Parmesan cheese over any remaining marinara sauce and serve it alongside each sandwich.

Recipe Tip:

  • Feel free to swap out the Parmesan for mozzarella if you prefer a different cheese.
