Lamb Meatballs with Mint Gravy

Ingredients

Mint Sauce

  • 1 bunch fresh mint leaves, finely chopped
  • 2 tbsp cider vinegar
  • 1 tbsp granulated sweetener

Meatballs

  • 500 g lean lamb mince
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 courgette (zucchini), grated
  • 1 ½ tbsp fresh mint, chopped
  • Salt and black pepper

Gravy

  • 1 onion, chopped
  • 2 cups (480 ml) beef stock (or lamb stock, if available)
  • Pinch onion powder
  • Pinch garlic powder
  • 1 tbsp tomato paste
  • Pinch dried rosemary
  • 1 tbsp cornstarch

Instructions

1. Make the Mint Sauce

  1. In a small bowl, combine mint leaves, cider vinegar, and sweetener.
  2. Cover and let sit for at least 5 hours, stirring occasionally, so the flavors infuse.

2. Prepare the Meatballs

  1. Heat a frying pan with a little cooking spray. Sauté the onion until golden and soft, then add garlic and courgette. Cook for 2 minutes. Set aside to cool slightly.
  2. In a large bowl, mix lamb mince, sautéed vegetables, fresh mint, and seasoning. Shape into 12 meatballs.
  3. Preheat oven to 200°C / 180°C fan / 400°F / Gas 6.
  4. Place meatballs on a lined tray and bake for 15 minutes until lightly browned. Remove and set aside.

3. Make the Gravy

  1. In the same frying pan, add spray oil and caramelize the onion until deep golden brown. This step is key for a rich gravy.
  2. Stir in tomato paste, onion powder, and garlic powder.
  3. Add stock and simmer for 15 minutes. Blend until smooth using a blender or stick blender.
  4. Return gravy to the pan. Stir in the mint sauce and a pinch of rosemary.
  5. Mix cornstarch with a little water, then stir into the gravy. Simmer for 15 minutes until thickened.

4. Finish the Dish

  1. Add the baked meatballs to the gravy and simmer gently until fully cooked through.
  2. Taste and adjust seasoning with salt and pepper.
