Instant Pot Corned Beef and Cabbage (Easy & Tender Recipe)

If you’ve ever spent hours babysitting a pot of corned beef, this recipe is about to change everything.

With the Instant Pot, what used to take 4–5 hours is now done in about 90 minutes, and the result is unbelievably tender, juicy meat every single time. No stress, no constant checking—just set it and let it work its magic.

The secret? Pressure cooking locks in moisture while breaking down the meat perfectly. And adding a bottle of Guinness gives the dish a rich, slightly bitter depth that makes it feel extra special.

👉 This is the ultimate comfort meal—perfect for St. Patrick’s Day or any cozy dinner.

❤️ Why You’ll Love This Recipe

  • ⏱️ Fast cooking time – ready in under 2 hours
  • 🍲 One-pot meal – meat and veggies cooked together
  • 🥕 Simple ingredients – no complicated prep
  • 🍀 Classic comfort food with less effort
  • 👨‍👩‍👧‍👦 Family-friendly and satisfying

🥩 Ingredients

For the beef:

  • 4 lb corned beef brisket
  • 1 onion, cut into large chunks
  • 8 garlic cloves, smashed
  • 12 oz dark beer (like Guinness)
  • 3½ cups water
  • 1 bay leaf

For the vegetables:

  • 4 carrots, cut into chunks
  • 2 potatoes, chopped
  • 1 cabbage, cut into wedges

👨‍🍳 Instructions

1. Prep the ingredients

Cut the onion into chunks and smash the garlic cloves to release their flavor.

2. Build the base

Add onion and garlic to the bottom of the Instant Pot.
Place the corned beef on top (fat side up), then pour in the beer, water, and add the bay leaf.

3. Pressure cook

Seal the lid and cook on HIGH pressure for 90 minutes.

4. Natural release

Allow a 15-minute natural pressure release, then carefully vent the rest.

Remove the beef and loosely cover to keep warm.

5. Cook the vegetables

Add carrots, potatoes, and cabbage to the liquid.

Cook on HIGH pressure for 3 minutes, then quick release.

6. Slice and serve

Slice the beef against the grain for maximum tenderness.

Serve with vegetables and spoon some of the flavorful broth over everything.

⚠️ Helpful Tips

  • 🔪 Always slice against the grain to avoid tough meat
  • ⏳ Don’t skip the natural release—it keeps the meat juicy
  • 🥕 Add veggies at the end to prevent mushiness
  • 💧 Make sure there’s enough liquid for pressure cooking

🍽️ What to Serve With It

  • Irish soda bread or crusty bread
  • Mustard or horseradish sauce
  • A light green salad for balance

🧊 Storage

  • Fridge: up to 4 days
  • Freezer: beef only, up to 3 months
  • Reheat gently with a bit of broth to keep it moist

💡 Pro Tip

This dish tastes even better the next day—the flavors deepen and become even richer!
