Impressive Cranberry Brie Stuffed Chicken

Ingredients

Chicken & Filling:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 ounces Brie cheese, rind removed, cut into small pieces
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Topping & Garnish:

  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Make cranberry filling:
    • Heat olive oil in a medium saucepan over medium heat.
    • Add cranberries and cook, stirring occasionally, until they begin to soften and burst (about 5 minutes).
    • Stir in honey, orange juice, cinnamon, ginger, salt, and black pepper. Cook for 3–4 minutes until slightly thickened. Remove from heat and let cool.
  3. Prepare chicken:
    • Cut a pocket into the center of each chicken breast, careful not to cut all the way through.
    • Stuff each breast with Brie pieces, then spoon in cranberry mixture. Secure with toothpicks.
  4. Sear chicken:
    • Heat an oven-safe skillet over medium-high heat.
    • Sear chicken 2–3 minutes per side until golden brown. Remove from skillet.
  5. Add breadcrumb topping:
    • Mix panko breadcrumbs with melted butter.
    • Spread evenly over each chicken breast.
  6. Bake:
    • Return chicken to the skillet and transfer to oven.
    • Bake 20–25 minutes, or until internal temperature reaches 165°F (74°C).
    • Rest 5 minutes before serving.
  7. Garnish: Sprinkle with fresh parsley before serving.

  • Increase honey for a sweeter filling.
  • Grated orange zest adds a bright, aromatic touch.
