Ingredients:

  • 1 quart oil, for frying
  • 1 large onion, diced
  • ½ cup white sugar
  • 2 large eggs, beaten
  • 1 cup self-rising flour
  • 1 cup self-rising cornmeal

Instructions:

  1. Heat oil in a deep skillet or pan to 365°F (medium heat).

  3. Stir in the flour and cornmeal until the batter is stiff and lump-free.
  4. Drop rounded teaspoons of batter into the hot oil (cook 4 at a time to avoid overcrowding). Fry 1–2 minutes per side until golden brown.
  5. Remove with a slotted spoon and drain on paper towels. Serve warm.
