Ingredients

For the Macarons:

  • 3/4 cup (90g) almond flour
  • 1 cup (125g) powdered sugar
  • 2 egg whites
  • 1/2 tsp salt
  • 1/4 cup (50g) white sugar
  • 1 tsp strawberry essence
  • 1-2 drops gel food coloring

For the Vanilla Buttercream:

  • 1 stick (113g) butter, softened
  • 1 1/2 cups (190g) powdered sugar
  • 1 tsp vanilla essence
  • 1 tbsp milk

Instructions

  1. Prepare the Dry Ingredients:
    • In a food processor, combine the almond flour and powdered sugar. Pulse 5-6 times until well mixed. Transfer to a medium bowl.
  2. Whip the Egg Whites:
    • Separate the egg whites and place them in a bowl with salt. Using a stand mixer or hand mixer, whip the egg whites until foamy. Gradually sprinkle in the 1/4 cup sugar while mixing on high speed. Continue until you reach the soft peak stage.
    • Add the strawberry essence and gel food coloring, then whip until stiff peaks form.
  3. Combine Ingredients:
    • Fold half of the whipped egg whites into the dry ingredients until combined. Then, gently fold in the remaining egg whites until the mixture is smooth and can form a figure 8 without breaking.
  4. Pipe the Macarons:
    • Spoon the batter into a piping bag fitted with a small round tip. Pipe 1-inch rounds on a lined baking sheet, spacing them about an inch apart. Tap the baking sheet on the counter 5 times to release any air bubbles. Let the piped macarons rest for 30 minutes.
  5. Bake:
    • Preheat the oven to 150°C (300°F). Once the macarons are dry to the touch, bake for 15 minutes. Allow them to cool completely on a wire rack.

Make the Vanilla Buttercream

  1. In a stand mixer or large bowl, beat the softened butter on medium speed for about 5 minutes, or until light and fluffy.
  2. Gradually add the powdered sugar, mixing well between each addition until fully combined.
  3. Add the vanilla essence and milk, then mix until smooth.

Assemble the Macarons

  • Pipe about 1 tablespoon of buttercream onto the flat side of one macaron and sandwich it with another. Press gently until the buttercream reaches the edges. Repeat with the remaining macarons.

Enjoy your homemade strawberry macarons! Perfect for sharing or indulging in yourself! 💕🍰 #Macarons #Baking #Dessert #SweetTreats
