Ingredients:

  • 12 ounces penne pasta
  • 2 cups cooked chicken, diced
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted

Directions:

  1. Preheat & Prep: Heat oven to 350°F. Butter a 9×13 inch baking dish.
  2. Cook Pasta: In a large pot of salted water, cook the penne until al dente (it will finish cooking in the oven).
  3. Combine Ingredients: Drain pasta, and in the same pot, mix the cooked penne with diced chicken, cream of chicken soup, sour cream, milk, garlic powder, onion powder, and parsley. Season with salt and pepper to taste.
  4. Layer: Pour half of the mixture into the baking dish, top with 1 cup of shredded cheese, then add the remaining pasta mixture.
  5. Top with Cheese & Breadcrumbs: Sprinkle the rest of the cheese over the top. In a small bowl, combine breadcrumbs with melted butter, then spread evenly over the casserole for added crunch.
  6. Bake: Place in the oven and bake for 25-30 minutes, or until the casserole is bubbling around the edges and the top is golden-brown.
  7. Rest & Serve: Let it rest briefly after baking – good things are worth the wait.
