  • Why It’s Perfect for Keto and Low-Carb Diets:

Ingredients:

  • 32 oz chicken broth (or chicken bone broth)
  • 2 large eggs
  • 1 tablespoon tamari, coconut aminos, or soy sauce
  • 3 teaspoons fresh grated ginger (or frozen ginger cubes)
  • ½ teaspoon sesame oil
  • ½ teaspoon garlic salt
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Optional: Red pepper flakes or sriracha sauce for spice

Instructions:

  1. In a medium pot, combine chicken broth, tamari (or coconut aminos), ginger, sesame oil, and garlic salt. Heat over medium-high until the broth begins to boil. Then reduce to low and let it simmer.
  2. While simmering, beat the eggs in a small bowl.
  3. Slowly pour the beaten eggs into the simmering broth while continuously stirring in one direction. This will create delicate egg ribbons throughout the soup.
  4. Add the sliced green onions to the pot. Season with salt and pepper to taste.
  5. Divide the soup between 2-4 bowls. Serve immediately and enjoy!

Helpful Tips:

  • Spicy Kick: Add a pinch of red pepper flakes or a drizzle of sriracha if you like a little heat.
  • Thicker Soup: If you prefer a thicker soup, you can add up to 2 tablespoons of cornstarch (or arrowroot powder) to the broth mixture before heating. Whisk it in until smooth.
  • Tasty Additions: Enhance the soup by adding cooked chicken, tofu, mushrooms, or other low-carb veggies. You can also top it with crunchy seaweed or a sprinkle of sesame seeds.

Why It’s Perfect for Keto and Low-Carb Diets:

  • Zero Carbs: This egg drop soup is made with simple, low-carb ingredients like broth, eggs, and sesame oil, ensuring it stays keto-friendly and suitable for weight loss.
  • No Cornstarch: While many egg drop soups use cornstarch to thicken the broth, our recipe skips that ingredient, making it even lighter and lower in carbs.
