  • Comfort food at its finest: Every bite tastes like your favorite KFC bowl.
  • Customizable: Use leftover chicken, turkey, or even spice it up with pepper jack cheese.
  • Family-friendly: Perfect for scooping into individual bowls for dinner.

Ingredients

  • 8 strips Tyson Crispy Chicken Strips (frozen)
  • 1 tub (24 oz) Bob Evans Original Mashed Potatoes or 2½ cups leftover homemade mashed potatoes
  • 1 cup corn (thawed frozen or drained canned)
  • ½ cup chicken or turkey gravy (jarred or homemade)
  • ¾ cup shredded cheddar cheese

Optional: Add leftover stuffing, turkey, cranberry sauce, or spicy chicken and pepper jack cheese for a creative twist.

Instructions

Step 1: Cook the Chicken

Oven method: Preheat to 400ºF. Arrange the frozen chicken strips on a cookie sheet and bake 18–20 minutes, or until hot and crispy.

Air fryer method: Preheat to 360ºF. Place chicken strips in a single layer in the basket and air fry 11–12 minutes, until heated through.

Step 2: Prepare the Casserole

  1. Reduce oven temperature to 350ºF.
  2. Coat an 8×8-inch glass baking dish with non-stick spray.
  3. Spread mashed potatoes evenly in the bottom of the dish.
  4. Spoon corn evenly over the potatoes.
  5. Drizzle gravy over the corn.
  6. Arrange the cooked chicken strips on top.
  7. Sprinkle shredded cheddar cheese over everything.

Step 3: Bake

Bake at 350ºF for 10–12 minutes, until the casserole is hot and the cheese is melted and bubbly.

Step 4: Serve

Scoop into individual bowls and enjoy! This casserole is perfect for cozy family dinners or weeknight meals.

Tips for Success

  • Use leftovers: Mashed potatoes, gravy, or chicken from previous meals work perfectly.
  • Get creative: Add turkey, stuffing, or cranberry sauce for a post-holiday twist.
  • Spice it up: Swap cheddar for pepper jack cheese or use spicy chicken strips for extra heat.
  • Individual portions: Perfect for meal prep—reheat leftovers in the microwave for an easy dinner.

Storage

  • Refrigerator: Store leftovers in an airtight container for up to 3 days.
  • Reheating: Microwave individual servings or warm gently on the stovetop until heated through.
