  • 1 ½ tsp granulated sugar
  • 1 envelope active dry yeast
  • 2 tsp salt
  • 1 ½ cups warm water (110–115°F)
  • 2 tbsp + 2 tsp olive oil, divided

For the Garlic Butter Coating

  • ½ cup unsalted butter
  • 6 cloves garlic, minced
  • ⅓ cup fresh parsley, minced
  • 1 ½ tsp garlic salt or garlic powder
  • ⅓ cup grated Parmesan cheese

1. Make the Dough

In a stand mixer with a dough hook, combine flour, sugar, yeast, and salt. With the mixer on low, add warm water and 2 tablespoons of olive oil. Mix until a smooth dough forms. If it’s too sticky, add a little flour; if too dry, add a tablespoon of water at a time.

Knead the dough briefly on a floured surface until smooth, then place it in an oiled bowl. Cover and let rise in a warm spot until doubled in size (about 90 minutes).


2. Shape the Knots

Turn the dough onto a floured surface and divide into two pieces. Rest for 10 minutes, then cut each into 8 equal portions. Roll each piece into a rope and tie into a loose knot. Place on a parchment-lined baking sheet, cover lightly, and let rise again for 30 minutes.


3. Bake Until Golden

Preheat the oven to 450°F (230°C). Brush knots with a bit of melted butter (optional) and bake for 20 minutes, or until golden and firm.

Or, bake slightly underdone at 275°F for 16 minutes, cool, and freeze. When ready to serve, reheat from frozen at 400°F for 10–15 minutes, brush with garlic butter, and enjoy!
