Pasta & Chicken

Instructions

  1. Cook the Pasta
    Bring a large pot of salted water to a boil. Add linguine and cook according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Prepare the Chicken
    Pound chicken breasts to even thickness. Season both sides with 1½ Tbsp of Cajun seasoning.
  3. Cook the Chicken
    Heat olive oil in a large skillet over medium-high heat. Add chicken and sear on both sides until golden. Reduce heat and cook through until the internal temperature reaches 165˚F. Transfer to a cutting board, slice into thin strips, and cover to keep warm.
  4. Make the Sauce
    In the same skillet, melt butter over medium heat. Sauté garlic for 30–60 seconds until fragrant. Add diced tomatoes and cook for 2 minutes. Stir in heavy cream, remaining Cajun seasoning, and Parmesan cheese. Bring to a gentle simmer, adjusting seasoning if needed.
  5. Combine Pasta and Chicken
    Add sliced chicken and cooked pasta to the sauce. Toss to coat evenly. If the sauce is too thick, stir in reserved pasta water until desired consistency is reached.
  6. Serve
    Plate the pasta and sprinkle with chopped parsley and extra Parmesan. Enjoy immediately!
