Heirloom Tomato Salad

Heirloom Tomato Salad

Equipment:

  • Salad bowl

Ingredients:

  • 1 lb heirloom tomatoes, sliced into ½-inch wedges
  • 1 cup colored grape tomatoes, halved
  • Sea salt or kosher salt, to taste
  • Fresh ground black pepper, to taste
  • ½ cup thinly sliced red onions
  • 2 tbsp extra virgin olive oil
  • 2-3 tsp balsamic vinegar (or to taste)
  • 1 clove garlic, minced
  • ⅓ cup crumbled feta cheese
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley

Instructions:

  1. Arrange the Tomatoes:
    Place the heirloom and grape tomato slices in a salad bowl. Season with salt and pepper.
  2. Add the Onions:
    Spread the sliced red onions evenly over the tomatoes.
  3. Make the Dressing:
    In a small bowl, whisk together olive oil, balsamic vinegar, and minced garlic. Drizzle the dressing over the salad.
  4. Toss the Salad:
    Gently toss the ingredients to coat the tomatoes and onions in the vinaigrette. Adjust the seasoning with more salt or vinegar if needed.
  5. Top with Feta and Herbs:
    Sprinkle the crumbled feta cheese over the salad and garnish with chopped basil and parsley.
