Hearty Bundt Cake Breakfast

Ingredients

  • 1 heaping cup diced ham (cut into 3/4″ cubes)
  • 2 cups chopped spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (or minced garlic)
  • Large pinch cayenne pepper
  • 2 cups shredded hash browns (frozen works well)
  • 8 cups diced bread (cut into 3/4″ cubes)
  • 1/4 cup chopped green onions
  • 12 large eggs (or 8 jumbo eggs)
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dry mustard
  • 2 cups shredded cheese

Instructions

  1. Prepare the Spinach: In a skillet, sauté the chopped spinach until it wilts. Remove from the pan and set aside.
  2. Cook the Hash Browns: In the same skillet, add the shredded hash browns and fry until golden brown, stirring constantly. Season with salt and pepper to taste. Remove from heat.
  3. Layer the Ingredients: In a greased baking dish, layer the ingredients in the following order:
    • Half of the diced bread
    • Diced ham
    • Sautéed spinach and chopped green onions
    • Fried hash browns
    • Remaining shredded cheese
    • The other half of the diced bread
  4. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, heavy cream, salt, black pepper, and dry mustard until well combined. Pour this mixture evenly over the layered ingredients in the baking dish. Press down lightly to help the bread absorb the liquid. Allow it to rest for about 30 minutes.
  5. Bake the Bundt Cake: Preheat your oven to 400°F (200°C). Sprinkle the remaining shredded cheese on top of the dish. Bake for 40 minutes or until golden and set. To check for doneness, insert a knife into the center; it should come out clean.
  6. Serve: Carefully invert the Bundt cake onto a flat plate to serve. Cut into portions and enjoy your hearty breakfast!
