It’s also highly adaptable—perfect for customizing based on what you have in your kitchen.

🛒 Ingredients (Serves 4–6)

For the Soup

  • 1 cinnamon stick
  • ¼ cup low-sodium soy sauce
  • ½ oz dried shiitake mushrooms
  • 3 garlic cloves, sliced
  • 3 cups hot water
  • 1 tbsp peanut oil (or neutral oil)
  • 6 slices fresh ginger
  • 1 star anise
  • 2 cups mung bean sprouts
  • 1 tsp black pepper
  • 6 cups chicken broth
  • 8 green onions (white parts, cut into pieces)
  • 2 cups diced onion
  • 1 fennel bulb, chopped
  • 2 lbs boneless chicken thighs, diced
  • 1 lb bok choy stems, sliced

For Garnish

  • ½ cup fresh cilantro, chopped
  • 1 lb bok choy leaves, chopped
  • 2 tsp toasted sesame oil
  • Lime wedges
  • Green onion tops, chopped

👩‍🍳 Instructions

1. Prepare the Mushrooms

Soak dried mushrooms in boiling water for at least 30 minutes.
Slice them thinly and reserve the soaking liquid for added flavor.

2. Build the Soup Base

Heat oil in a large pot over medium heat.
Add onions, garlic, and ginger, cooking for about 5 minutes until fragrant.

Pour in the reserved mushroom liquid, chicken broth, soy sauce, cinnamon stick, star anise, and pepper. Bring to a boil, then reduce to a simmer.

Add the chicken and simmer for 20 minutes to develop flavor.

3. Add Vegetables

Stir in fennel, scallion whites, and mushrooms. Cook for 5 minutes.

Add bok choy stems and cook for another 3 minutes.

Finally, add bok choy leaves and bean sprouts, cooking just until wilted (about 2 minutes).

4. Finish & Serve

Remove the cinnamon stick and star anise.

Ladle into bowls and garnish with cilantro, green onions, and a drizzle of sesame oil. Serve with lime wedges for a fresh, citrusy finish.
