A Nostalgic Treat with a Healthy Twist

Almond Joys bring back fond memories for me, especially of my dad sneaking candy from our Halloween bags. Growing up as a coconut fan, I’ve always loved the combination of coconut, chocolate, and almonds — it’s simply the best. As an adult, I wanted to recreate this nostalgic treat with a healthier spin. So, I’ve whipped up these simple, no-bake bites that are just as delicious but made with only natural ingredients.

These bite-sized treats are perfect for meal prep and will last for the whole week. They’re naturally sweetened with maple syrup or honey, giving them a delicious, lightly sweet taste that won’t spike your blood sugar. Plus, they’re toddler- and kid-friendly, making them an ideal healthy snack for the whole family.

Ingredients:

  • Unsweetened finely shredded coconut – I recommend finely shredded coconut to help the mixture hold together.
  • Coconut oil – Helps bind the coconut mixture and adds a slight coconut flavor.
  • Maple syrup – For natural sweetness, or you can use honey or agave.
  • Vanilla extract & sea salt – Optional but recommended for extra flavor.
  • Raw almonds – For that satisfying crunch.
  • Chocolate chips – Dark chocolate works best for a low-sugar option, or you can use chopped chocolate bars like Hu Kitchen.

Steps:

  1. Make the Coconut Base: Combine all of the coconut base ingredients (coconut, coconut oil, vanilla, sea salt, and maple syrup) in a food processor and blend until the mixture is sticky and tacky.
  2. Shape the Coconut Bites: Press the mixture into a mini muffin tin, packing it down firmly.
  3. Melt the Chocolate: In a separate bowl, melt the chocolate chips and coconut oil in the microwave or using a double-boiler method.
  4. Assemble: Spoon melted chocolate over the coconut mixture, covering it completely, and place a raw almond in the center.
  5. Freeze: Freeze the bites for 3-4 hours until set. Store in an airtight container, and enjoy straight from the freezer for the best texture!

Tips for Making Healthy Almond Joy Bites:

  • No Mini Muffin Tin?: Use a loaf pan lined with parchment paper. Press the coconut mixture in, then pour the chocolate on top. Freeze and cut into bars once set.
  • Roasted Almonds?: If you prefer roasted almonds, feel free to toast them yourself. Just be sure to cool them before using in the recipe.
  • Chocolate Variety: Feel free to use your favorite chocolate – dark, white, or milk. Each variation will give the bites a unique flavor.

Storage:

These healthy almond joys can be stored in the fridge for a couple of weeks or kept in the freezer for up to two months. I recommend keeping them in the freezer for the best texture, as the chocolate firms up nicely and the coconut holds together perfectly.
