  • ⅛ tsp ground cloves
  • ⅓ cup reserved pasta water
  • Salt, to taste
  • 2 hard-boiled eggs, halved (for serving)

Step-by-Step Instructions

  1. Cook the pasta – Boil spaghetti according to package directions until al dente. Reserve about ⅓ cup of the pasta water for later.
  2. Sauté the aromatics – In a large saucepan, heat olive oil over medium heat. Add epis and cook until fragrant and lightly golden.
  3. Add vegetables – Stir in onion, green pepper, red pepper, and tomatoes. Sauté for 5 minutes, until softened.
  4. Build the sauce – Add tomato paste, Maggi cubes, sliced hot dogs, and ground cloves. Stir to coat.
  5. Simmer – Pour in reserved pasta water and let the sauce simmer for 10–15 minutes, until slightly thickened. Season with salt to taste.
