Gooey Deep Dish Chocolate Chip Cookie Pie (Secretly Healthy!)

🍪✨ What could be better than a warm chocolate chip cookie? How about a deep dish chocolate chip cookie pie — soft, gooey, and loaded with melty chocolate chips in every bite! This show-stopping dessert is secretly healthier than your traditional cookie pie, but no one will ever guess.

Perfect for holidays like Thanksgiving, Christmas, or the 4th of July — or for birthdays, summer cookouts, or anytime you want to impress a crowd. Serve it warm with a scoop of ice cream, and watch it disappear fast!

Why You’ll Love This Cookie Pie

✔️ Gooey, chocolatey, and decadent
✔️ High in fiber and protein thanks to oats & chickpeas
✔️ Secretly healthy but tastes indulgent
✔️ Dairy-free, vegan, gluten-free, and nut-free options
✔️ A party dessert everyone will rave about!

Ingredients You’ll Need

  • 2 cans white beans or chickpeas (about 500g drained & rinsed)
  • 1 cup quick oats (or almond flour for a gluten-free option)
  • ¼ cup applesauce (or plain/Greek yogurt)
  • 3 tbsp oil (or ¼ cup nut butter like almond, cashew, or peanut)
  • 2 tsp pure vanilla extract
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups brown sugar (or coconut sugar/unrefined sugar)
  • 1 cup chocolate chips (plus extra for sprinkling)

👉 Optional add-ins: shredded coconut, walnuts, pecans, or a swirl of Nutella.

Step-by-Step Instructions

1. Prep the beans & oats

Drain and rinse beans very well. If using rolled oats, pulse them in a food processor until finely ground.

2. Blend the batter

Add beans, oats (or almond flour), applesauce, oil/nut butter, vanilla, baking powder, baking soda, salt, and sugar to the food processor. Blend until smooth and cookie-dough-like.

3. Stir in chocolate chips

Turn off the machine and fold in chocolate chips by hand.

4. Bake the cookie pie

Spread batter evenly into a greased 9–10 inch springform pan. Sprinkle extra chocolate chips on top. Bake at 350°F (175°C) for 35 minutes.

5. Cool & serve

Let rest for at least 10 minutes before removing from pan. Serve warm with ice cream or let cool completely before slicing.

Storage Tips

  • Store covered at room temperature overnight for serving the next day.
  • For longer storage, refrigerate in an airtight container.
  • Freeze slices for a quick dessert anytime — just reheat in the microwave or oven before serving.

Recipe Notes & Variations

  • Swap chickpeas for white beans (cannellini or great northern).
  • Replace applesauce with pumpkin puree, mashed banana, or yogurt.
  • Use coconut sugar or maple syrup for refined sugar-free options.
  • For a peanut butter twist, use peanut butter instead of neutral nut butter.

Serving Ideas

🍦 With almond milk, coconut, or keto ice cream
🍫 Drizzled with hot fudge or Nutella
🥳 As a party dessert, birthday treat, or holiday centerpiece
