  • 2 tsp pure vanilla extract
  • 2 tsp baking powder

  • 1 ½ cups brown sugar (or coconut sugar/unrefined sugar)
  • 1 cup chocolate chips (plus extra for sprinkling)

👉 Optional add-ins: shredded coconut, walnuts, pecans, or a swirl of Nutella.


Step-by-Step Instructions

1. Prep the beans & oats

Drain and rinse beans very well. If using rolled oats, pulse them in a food processor until finely ground.

2. Blend the batter

Add beans, oats (or almond flour), applesauce, oil/nut butter, vanilla, baking powder, baking soda, salt, and sugar to the food processor. Blend until smooth and cookie-dough-like.

3. Stir in chocolate chips

Turn off the machine and fold in chocolate chips by hand.

4. Bake the cookie pie

Spread batter evenly into a greased 9–10 inch springform pan. Sprinkle extra chocolate chips on top. Bake at 350°F (175°C) for 35 minutes.

5. Cool & serve

Let rest for at least 10 minutes before removing from pan. Serve warm with ice cream or let cool completely before slicing.
