Glazed Buttermilk Donut Cake

All the delicious flavor of a classic glazed donut, now in a sliceable, shareable Bundt cake form! This tender and buttery cake is perfect for any occasion.

Ingredients:

  • Baking spray with flour
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups (12 oz.) unsalted butter, softened
  • 4 large eggs, room temperature
  • 2 tsp. vanilla extract
  • 3 1/2 cups (about 14 7/8 oz.) all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. kosher salt
  • 3/4 tsp. ground nutmeg
  • 1/2 tsp. baking soda
  • 1 cup whole buttermilk
  • 2 cups (about 8 oz.) powdered sugar
  • 1/4 cup water

Instructions:

Step 1: Prepare the pan
Preheat your oven to 350°F (175°C). Coat a 12- to 15-cup Bundt pan with baking spray.

Step 2: Cream butter and sugar
Using a stand mixer with a paddle attachment, beat the granulated sugar and softened butter on medium-high speed until pale and fluffy, about 2-3 minutes. Scrape down the sides of the bowl as needed. Add the eggs one at a time, beating until just combined after each addition. Stir in the vanilla extract.

Step 3: Mix dry and wet ingredients
In a separate medium bowl, whisk together the flour, baking powder, salt, nutmeg, and baking soda. With the mixer on low speed, gradually add the flour mixture to the butter mixture in batches, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined after each addition.

Step 4: Bake the cake
Spoon the batter evenly into the prepared Bundt pan. Gently tap the pan on the counter 3-5 times to release any air bubbles. Bake in the preheated oven for 45-50 minutes, or until a wooden pick inserted into the center comes out clean. Let the cake cool in the pan on a wire rack for 15 minutes. Then, invert the cake onto a cutting board or platter, and gently flip it back over so the rough side is facing up. Allow it to cool completely for about 1 hour.

Step 5: Make the glaze
In a medium bowl, whisk together the powdered sugar and water until smooth. Brush the glaze generously over the cooled cake. Slice and serve.
