Ingredients

For the Chicken Bites:

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste

For the Parmesan Pasta:

  • 300 g (10 oz) pasta (penne, fettuccine, or your choice)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups (360 ml) heavy cream
  • 1/2 cup (50 g) freshly grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)

Instructions

1. Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. Prepare the Chicken Bites:
In a bowl, season chicken pieces with paprika, garlic powder, salt, and pepper.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–7 minutes, stirring occasionally, until golden and cooked through.
Add butter and minced garlic to the skillet, stirring to coat the chicken. Cook for another 1–2 minutes, then remove the chicken from the pan and set aside.

3. Make the Creamy Parmesan Sauce:
In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
Pour in the heavy cream and stir well. Bring to a gentle simmer.
Add Parmesan cheese and Italian seasoning, stirring frequently until the sauce thickens slightly, about 2–3 minutes. Season with salt and pepper.

4. Combine Pasta and Sauce:
Add the cooked pasta to the skillet with the sauce. Toss well to coat the pasta evenly. Stir in chopped parsley and adjust seasoning as needed.

5. Serve:
Plate the creamy Parmesan pasta and top with the garlic butter chicken bites. Garnish with extra parsley and serve immediately.

Tips for Success

  • Use freshly grated Parmesan cheese for the best flavor and smooth sauce texture.
  • Don’t overcook the chicken to keep it juicy and tender.
  • Add a pinch of red pepper flakes to the sauce if you want a subtle spicy kick.
  • Swap chicken for shrimp, turkey, or tofu to customize the protein.

Serving Suggestions

  • Serve with a fresh green salad tossed in a light vinaigrette to balance the richness.
  • Garlic bread or a crusty baguette is perfect for soaking up any extra sauce.
  • Pair with a chilled glass of Chardonnay or Pinot Grigio for a complete meal.

Storage and Reheating

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop over low heat, adding a splash of cream or milk to restore sauce creaminess.
  • Freezing is possible but not recommended, as cream-based sauces can separate when thawed.

FAQ

Can I use a different meat instead of chicken?
Yes! Shrimp, turkey, or diced pork work well. Adjust cooking times accordingly.

Can I prepare this ahead of time?
You can cook the chicken and make the sauce separately in advance. Reheat and toss with freshly cooked pasta for best results.

How can I make it healthier?
Try substituting heavy cream with half-and-half or a plant-based alternative, use whole-grain or gluten-free pasta, and reduce butter or replace some with olive oil.

Can I add vegetables?
Absolutely! Sautéed spinach, roasted cherry tomatoes, or steamed broccoli all complement this dish beautifully.

Enjoy this rich, flavorful meal that brings creamy comfort and savory satisfaction to your table in under 40 minutes!
