Frika is a traditional Slovenian dish made primarily with potatoes and cheese, cooked together in a pan until crispy on the outside and soft inside.

1. Prepare the Potatoes

Peel and grate the potatoes.

Place them in cold water, rinse thoroughly, and repeat 2–3 times until the water runs clear.
👉 This removes excess starch for better texture.


2. Cook the Pancetta

In a pan, cook diced pancetta over medium heat for 3–4 minutes until slightly crispy.

(You can substitute with olive oil or lard.)


3. Cook the Potatoes

Add the drained potatoes to the pan and spread evenly.

Cook while stirring for 15–18 minutes, until soft.

4. Add the Cheese

Stir in half of the cheese and cook until melted.

Add the remaining cheese and herbs, then mix well.


5. Crisp the Frika

Flatten the mixture evenly in the pan and cook for 5 minutes.

Flip it over carefully and cook another 5 minutes until golden and crispy.


6. Serve
