French Chicken Casserole

If you’re looking for the ultimate comfort food dinner, this French Chicken Casserole delivers everything you want in one cozy dish. Tender chicken thighs are seared until beautifully golden, then slowly baked with baby potatoes, mushrooms, fresh herbs, and a rich white wine sauce that brings all the flavors together.

This rustic French-inspired meal feels elegant enough for guests but is simple enough to prepare on a regular weeknight. The slow cooking allows the ingredients to soak up the aromatic flavors of garlic, thyme, rosemary, and savory broth, creating a dish that’s deeply comforting and incredibly satisfying.

Serve it with a slice of crusty bread to soak up every bit of the creamy herb sauce — because you definitely won’t want to leave any behind.

Why You’ll Love This Recipe

Pure comfort food
Golden chicken, creamy sauce, and tender potatoes make this dish warm and satisfying.

One-pot meal
Everything cooks together in a single pot, making cleanup easy.

Rich and flavorful sauce
White wine, fresh herbs, and chicken stock create a deep, savory flavor.

Perfect for any occasion
Great for weeknight dinners but impressive enough for entertaining.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, halved
  • 3 large shallots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • ½ cup dry white wine
  • 2 cups chicken stock
  • 1 pound baby gold potatoes, halved
  • 4 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 1 bay leaf
  • ¼ cup heavy cream

Instructions

1. Preheat the Oven

Preheat your oven to 325°F (160°C).

Season the chicken thighs with salt and freshly ground black pepper.

2. Sear the Chicken

Melt the butter in a large Dutch oven or heavy pot over medium heat.

Place the chicken skin-side down and sear until golden brown, about 2–3 minutes per side.

Work in batches if necessary so the chicken browns properly. Remove the chicken from the pot and set aside.

3. Cook the Vegetables

In the same pot, add:

  • Mushrooms
  • Shallots
  • Celery

Cook for 5–7 minutes, stirring occasionally, until the mushrooms soften and begin to brown.

Season lightly with salt and pepper.

Add the garlic and cook for about 1 minute until fragrant.

4. Build the Sauce

Sprinkle the flour over the vegetables and stir well, cooking for about 1 minute to remove the raw flour taste.

Slowly pour in the white wine, scraping the bottom of the pot to release all the flavorful browned bits.

Stir in the chicken stock, then add:

  • Baby potatoes
  • Thyme
  • Rosemary
  • Bay leaf

Return the seared chicken thighs to the pot.

5. Bake the Casserole

Transfer the Dutch oven to the oven and bake uncovered for 40–45 minutes.

The chicken should be fully cooked and the potatoes tender. The internal temperature of the chicken should reach 175°F (80°C).

6. Finish the Dish

Stir in the heavy cream, allowing the sauce to become slightly richer and smoother.

Taste and adjust seasoning with additional salt and pepper if needed.

Serve immediately.

Tips for the Best French Chicken Casserole

Use a heavy pot
A Dutch oven distributes heat evenly and works perfectly for this slow oven cooking.

Bone-in chicken is best
It provides more flavor and keeps the meat juicy.

Choose a drinkable wine
A dry white wine such as Pinot Grigio or Sauvignon Blanc works beautifully.

Don’t cover the pot
Cooking uncovered allows the chicken skin to stay crisp while the sauce reduces.

Substitutions and Variations

No mushrooms?
You can replace them with zucchini or eggplant, which absorb the sauce well.

No white wine?
Simply substitute with extra chicken stock.

Use dried herbs instead
If fresh herbs aren’t available, use 1 teaspoon dried herbs for every tablespoon of fresh herbs.

Use chicken breasts
Chicken breasts can be used, but cooking time may need adjustment since they cook faster.

What to Serve with French Chicken Casserole

This dish pairs beautifully with:

  • Crusty artisan bread
  • Buttered egg noodles
  • Creamy mashed potatoes
  • Roasted vegetables
  • Fresh green salad

The bread is especially perfect for soaking up the rich sauce.

Storage and Reheating

Leftovers store very well and the flavors become even better the next day.

  • Store in an airtight container in the refrigerator for up to 4 days
  • Reheat gently on the stovetop or in the microwave

Final Thoughts

This French Chicken Casserole is the kind of meal that feels both rustic and elegant at the same time. With its golden chicken, tender vegetables, and aromatic herb sauce, it’s a dish that warms you from the inside out.
