Easy Pecan Pie Cobbler

Ingredients:

  • 2 refrigerated pie crusts (from a package)
  • 2 ½ cups brown sugar
  • ½ cup melted butter + 1 tablespoon
  • 2 ½ cups light corn syrup
  • 4 teaspoons vanilla extract
  • 6 eggs, lightly beaten
  • 2 cups chopped pecans
  • 1 ½ cups pecan halves

Directions:

1. Preheat the Oven:

  • Set the oven to 425°F. (Note: You’ll reduce the temperature later.)

2. Prepare the Dish:

  • Grease a 9×13-inch casserole dish with non-stick spray.

3. First Pie Crust Layer:

  • Roll out one pie crust into a rectangle and place it in the bottom of the dish. It doesn’t have to be perfect.

4. Mix the Filling:

  • In a large bowl, combine brown sugar, ½ cup melted butter, corn syrup, eggs, and vanilla. Stir in the chopped pecans.

5. Assemble the First Layer:

  • Pour half of the pecan filling over the pie crust.

6. Second Pie Crust Layer:

  • Roll out the second pie crust and place it over the filling. Brush with the remaining 1 tablespoon of melted butter.

7. Bake First Layer:

  • Bake for about 15 minutes or until golden brown. Reduce the oven temperature to 350°F.

8. Add Final Layer:

  • Stir the remaining filling and pour it over the baked crust. Arrange pecan halves on top.

9. Bake Again:

  • Return to the oven and bake for 30 more minutes at 350°F.

10. Cool and Serve:

  • Let the cobbler cool for at least 1 hour to set. For extra indulgence, serve warm with vanilla ice cream!
