Easy Mexican Lasagna

This easy, cheesy Mexican lasagna is a flavorful twist on the classic Italian dish. Layers of seasoned ground beef, black beans, and corn tortillas are baked with a mix of shredded jack and cheddar cheese until hot and bubbly.   • 1 lb ground beef (or substitute ground turkey, shredded chicken, or pork)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced

  • ½ cup water
  • 14.5 oz fire-roasted diced tomatoes (or 1½ cups salsa)
  • 4 oz green chiles, diced
  • 15 oz black beans, drained and rinsed
  • 18 corn tortillas
  • 6 cups shredded jack and cheddar cheese
  • 1–2 medium tomatoes, diced, for garnish
  • 1 bunch green onions, sliced, for garnish
  • Sour cream, for serving

Instructions

  1. Preheat Oven & Prep Dish: Preheat to 350°F (175°C) and spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. Cook Beef Mixture: In a large skillet, cook ground beef and onion over medium heat until browned. Drain excess fat. Add garlic and sauté 1–2 minutes. Stir in taco seasoning and water, then mix in tomatoes, green chiles, and black beans. Heat through.
  3. Layer the Lasagna: Line the bottom of the prepared casserole dish with 6 corn tortillas, slightly overlapping. Spread ⅓ of the beef mixture on top, then sprinkle 2 cups of shredded cheese. Repeat to form three layers, finishing with cheese on top.
  4. Bake: Cover with aluminum foil and bake 30–40 minutes until casserole is bubbly and cheese is melted.
  5. Garnish & Serve: Let sit 10 minutes for easy slicing. Top with diced tomatoes and green onions. Serve with sour cream.
