Ingredients (Serves 4):

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 1 cup cauliflower florets (fresh or frozen)
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp chopped parsley (optional, for garnish)

Instructions:

1. Preheat Oven
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Cook the Chicken
Season chicken with garlic powder, onion powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Sear chicken for 4-5 minutes per side, until golden. Set aside.

3. Sauté Vegetables
In the same skillet, cook onion, cauliflower, and broccoli for 4-5 minutes until just tender. Season lightly with salt and pepper.

4. Make Cheese Sauce
In a saucepan, heat heavy cream and cream cheese over medium heat until smooth. Stir in mozzarella and Parmesan until the sauce is thick and creamy. Adjust seasoning if needed.

5. Assemble Casserole
Spread the sautéed vegetables in the bottom of the prepared baking dish. Place seared chicken on top. Pour cheese sauce over everything.

6. Bake
Cover with foil and bake for 25-30 minutes, or until chicken is cooked through (internal temp 165°F/74°C). Uncover and bake an additional 5-10 minutes to brown the cheese.

7. Serve
Remove from oven, garnish with fresh parsley, and serve hot.
