Easy Guacamole {Chipotle Copycat}

Ingredients & Tips

Avocados: Use ripe but firm avocados—they should yield slightly to gentle pressure. Remove the stem: if it’s green underneath, the avocado is perfect; brown spots mean it’s overripe.

Cilantro: Fresh cilantro adds authentic flavor. Chop or tear leaves, discarding stems. If you’re unsure about cilantro, start with half the amount and adjust to taste.

Red Onion: Provides a mild bite that intensifies as the guacamole rests. Yellow or white onion can be substituted if preferred.

Jalapeño: Adjust heat by using more or less. Remove seeds for a milder version. Note: older peppers can be spicier.

How to Make

  1. In a medium bowl, mash 2 peeled and pitted avocados with 2 teaspoons lime juice and ¼ teaspoon salt until smooth.
  2. Gently fold in 2 tablespoons chopped cilantro, ¼ cup diced red onion, and ½ diced jalapeño (seeds removed). Mix until combined.
  3. Store in an airtight container in the refrigerator for up to 2 days for the freshest flavor.

Pro Tip: To prevent browning, cover the guacamole surface with a thin layer of water before sealing. Pour off water before serving.
