Easy, Creamy, Garlicky Chicken and Broccoli Pasta

This Chicken and Broccoli Pasta is a creamy, garlicky, and satisfying meal that should definitely be added to your recipe rotation! Ingredients:

  • 8 ounces penne pasta (or pasta of choice)
  • 2 cups broccoli, cut into small florets
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup grated parmesan cheese
  • 2 chicken breasts, cooked and cut into small cubes

Instructions:

  1. Cook the Pasta and Broccoli:
    Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. In the last 5 minutes of cooking, add the broccoli florets to the boiling water with the pasta. Drain and set aside.
  2. Make the Sauce:
    In a large pot, heat olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened. Add minced garlic, salt, and pepper, and cook for another minute. Sprinkle the flour over the mixture and stir constantly for 1-2 minutes. Gradually whisk in the milk, stirring until smooth. Let the sauce cook for 2-3 minutes, or until it thickens.
  3. Combine and Serve:
    Stir in the grated parmesan cheese until it melts and the sauce is smooth. Add the cooked pasta, broccoli, and diced chicken to the pot. Stir until everything is well-coated and heated through (about 2-3 minutes). Transfer to a serving bowl and garnish with more parmesan if desired.

  • Broccoli: Cutting the broccoli into small florets ensures it cooks quickly and evenly.
  • Parmesan Cheese: For the best flavor and texture, use freshly grated parmesan cheese.
  • Chicken: You can easily use leftover chicken or rotisserie chicken for this recipe to save time.
