Ingredients

  • 1–2 pounds chicken breast, cut into small pieces
  • 2 cans cream of chicken soup
  • 1/3 cup sour cream
  • 1 box stuffing mix (like Stove Top)
  • 1 ½ cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven: Set to 350°F (175°C). Spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. Layer chicken: Spread diced chicken evenly in the casserole dish.
  3. Make sauce: In a bowl, mix cream of chicken soup and sour cream until smooth. Pour over the chicken.
  4. Prepare stuffing: Warm the chicken broth until hot. Stir the broth into the stuffing mix until combined, then spread it evenly over the soup layer.
  5. Bake: Cover with foil and bake for 30 minutes. Remove foil and bake uncovered for another 10–15 minutes until the chicken reaches 165°F internally and the top is golden.

Tips & Variations

  • For easier chopping, freeze chicken for 15 minutes before cutting.
  • Add ½ cup shredded cheese to the soup mixture for extra creaminess.
  • Use leftover or rotisserie chicken; reduce baking time accordingly.
  • Stir in frozen peas, carrots, or mixed veggies for a boost of color and nutrition.
  • Swap cream of chicken soup for cream of mushroom or celery soup for flavor variations.
  • Use your favorite stuffing mix or homemade stuffing for customization.

Storage

  • Refrigerate: Store leftovers in an airtight container for up to 5 days.
  • Freeze: Wrap tightly with plastic wrap and foil; freeze up to 3 months. Thaw overnight before reheating.
  • Reheat: Warm in a 350°F oven or microwave until heated through.

This hearty casserole is a comforting, kid-friendly meal that’s easy to prepare and full of flavor. Perfect for busy families looking for a simple, satisfying dinner.
