Dublin Coddle: Traditional Irish Comfort in a Bowl

Dublin Coddle is the ultimate Irish comfort food, combining savory sausages, smoky bacon, and tender vegetables in a rich, flavorful broth. This slow-simmered stew transforms simple, everyday ingredients into a warm, hearty dish perfect for chilly evenings, family dinners, or even a St. Patrick’s Day feast. Ingredients:

  • 4 pork sausages
  • 6 slices back bacon, chopped
  • 1 large onion, sliced
  • 4 large potatoes, peeled and sliced
  • 2 large carrots, peeled and sliced
  • 3 cups chicken broth
  • 1/2 cup white wine (optional)
  • 2 cloves garlic, minced
  • 1 tsp thyme
