Decadent Baileys Brownies – Triple-Layered Dessert for Adults

Ingredients

Brownie Layer

  • 1 cup unsalted butter
  • 8 oz semi-sweet chocolate, chopped

  • 3/4 cup all-purpose flour
  • 1/2 tsp salt

Baileys Buttercream

  • 2/3 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 3–4 tbsp Baileys Irish Cream

Baileys Chocolate Ganache

  • 8 oz semi-sweet chocolate, finely chopped
  • 1/2 cup Baileys Irish Cream

Instructions

1. Prepare the Brownies

  1. Preheat oven to 350°F (180°C). Line a 9×13-inch pan with parchment paper, leaving overhang for easy removal.
  2. Melt butter and chopped chocolate together in a heatproof bowl (microwave in 1-minute intervals, stirring until smooth).
  3. Whisk in sugar, then eggs one at a time, followed by vanilla extract.
  4. Gently fold in cocoa powder, flour, and salt.
  5. Pour batter into prepared pan and bake 32–37 minutes, or until a toothpick comes out clean or with a few moist crumbs. Cool completely.

2. Make the Baileys Frosting

  1. Beat softened butter in a large bowl until smooth.
  2. Gradually add powdered sugar and Baileys, alternating until desired sweetness and consistency is reached.
  3. Frost cooled brownies evenly, smoothing the top. Chill in the fridge for 20 minutes to firm the frosting.

3. Prepare the Baileys Ganache

  1. Place chopped chocolate in a heatproof bowl.
  2. Heat Baileys in the microwave until almost boiling, then pour over chocolate. Let sit 2 minutes, then whisk until smooth.
  3. Pour ganache over frosted brownies, spreading evenly. Refrigerate until firm.

4. Slice and Serve

  • Remove brownies from pan using parchment overhang. Slice with a sharp knife while cold for clean edges.

Tips & Notes

  • Can be made in a 9×9 pan (halve recipe).
  • Box mix brownies work perfectly; just add Baileys frosting and ganache.
  • Semi-sweet chocolate can be replaced with 50–70% dark chocolate. Avoid bittersweet chocolate.
  • Store in an airtight container in the fridge for up to 5 days.
