Crispy Potato Wedges with Creamy Cucumber Dip

Crispy potato wedges are the ultimate comfort food—and paired with a refreshing cucumber dip, they make the perfect easy weeknight meal!

Tips for Perfectly Crispy Wedges:
To get your potato wedges golden and crunchy, make sure your oven is hot enough: 200°C (fan) or 220°C (top and bottom heat) works best. Avoid overcrowding the baking sheet; spread the wedges on two trays if needed. For extra crispiness, briefly open the oven door midway to release steam.

Ingredients:

Potato Wedges:

  • 1 kg potatoes
  • 2 tbsp olive oil
  • 1 tbsp fry-seasoning (Bratkartoffelgewürz)
  • Coarse salt

Cucumber Dip:

  • 1 cucumber
  • 200 g sour cream
  • 200 g Skyr or low-fat quark
  • 2–3 tbsp chopped dill
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 220°C (top and bottom heat). Wash and optionally peel the potatoes, then cut them into wedges. Toss with olive oil and fry-seasoning. Spread evenly on a baking sheet and bake for 35–40 minutes until golden and crispy.
  2. While the wedges bake, prepare the cucumber dip. Thinly slice the cucumber. Mix sour cream and Skyr until smooth, then fold in cucumber slices and dill. Season with salt and pepper to taste.
  3. Remove wedges from the oven, sprinkle with coarse salt, and serve immediately with the creamy cucumber dip.

Serving Ideas:
For a complete meal, serve alongside fish sticks, grilled chicken, or a Greek-inspired gyros bowl.
