Crispy Oven-Baked BBQ Chicken Wings

I love classic Buffalo wings as much as anyone, but these BBQ wings truly take things to the next level. They’re juicy on the inside, crispy on the outside, and packed with smoky flavor. The secret? A double coating of seasoning and a double bake in the oven.

These wings are baked until crispy, tossed in rich barbecue sauce, then baked again to caramelized perfection. The result is sticky, smoky, crispy wings that taste like they came straight off the grill — no fryer required.

Why These Are the Best BBQ Wings

Double Coating – Every inch of the wings is covered in bold, smoky seasoning for maximum flavor.

Double Baking – Baking the wings twice ensures crispy skin and perfectly caramelized sauce.

Oven-Baked – No deep frying needed, making them easier and less messy.

Customizable – Works beautifully with any BBQ sauce, from sweet and smoky to spicy and tangy.

Ingredients

  • 2 pounds chicken drumettes and wingettes (about 20 pieces)
  • ⅓ cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 cup BBQ sauce

How to Make BBQ Chicken Wings

1. Preheat & Prepare

Preheat your oven to 425°F.

Line a baking sheet with aluminum foil and place a wire rack on top. Lightly spray with nonstick cooking spray. The rack helps air circulate around the wings for extra crispiness.

2. Make the Seasoning

In a small bowl, combine flour, baking powder, smoked paprika, garlic powder, chili powder, and salt. Mix well.

3. Coat the Wings

Place the wings in a large bowl. Sprinkle half of the seasoning mixture over them and toss to coat.

Add the remaining seasoning and toss again, ensuring every piece is fully coated.

4. First Bake

Arrange the wings in a single layer on the prepared rack.

Bake for 30 minutes, then flip the wings and bake for another 15 minutes until golden and crispy.

5. Sauce & Second Bake

Remove the wings and increase oven temperature to 500°F.

Transfer wings to a bowl and toss with BBQ sauce until fully coated.

Return them to the baking sheet and bake for 5–7 minutes, or until the sauce thickens and begins to caramelize.

6. Serve

Let cool slightly and serve hot. Expect crispy edges, sticky glaze, and bold smoky flavor in every bite.

Tips for Success

  • If using frozen wings, thaw completely and pat dry before seasoning.
  • Baking powder helps create crispier skin — don’t skip it.
  • Use a wire rack for best texture.
  • For extra heat, add cayenne pepper or toss in a spicy BBQ sauce.

Make It Your Own

These wings are a great base for experimenting with different sauces:

  • Sweet honey BBQ
  • Spicy chipotle BBQ
  • Korean-style BBQ
  • Smoky Buffalo sauce
