Creamy Roasted Garlic Tomato Soup

Ingredients

Roasted Tomatoes + Garlic:

  • 3 to 4 lbs. ripe tomatoes (a mix of large and cherry tomatoes works best)
  • 2 whole garlic bulbs, halved

Soup Base:

  • 1/2 onion, chopped
  • 1 tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or full-fat coconut cream for vegan option)
  • 2 cups vegetable broth
  • 4 tbsp tomato paste
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp all-purpose seasoning blend (store-bought or homemade)
  • 1/2 tsp smoked paprika

  • Roasted tomato pieces

How to Make It

  1. Roast the Tomatoes & Garlic: Preheat the oven to 400°F (200°C). Place tomatoes and garlic on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25–30 minutes until blistered and caramelized.
  2. Blend the Base: In a Dutch oven or medium saucepan, heat 1 tbsp olive oil over medium heat. Add chopped onions and sauté until soft and fragrant, about 2 minutes. Add roasted tomatoes, garlic (squeezed from skins), tomato paste, and vegetable broth to a blender along with the sautéed onions. Blend until smooth.
  3. Simmer the Soup: Pour the blended soup back into the pot. Stir in the cream (or coconut milk), sea salt, seasoning blend, and smoked paprika. Bring to a gentle boil, then reduce to low heat and simmer for 5–7 minutes until thickened and rich.
  4. Serve: Ladle into bowls, garnish with extra roasted tomatoes or herbs, and serve with grilled cheese or garlic bread. Enjoy!
