Creamy Miso Butter Beans with Spinach

  • Lemon juice – brightens the creamy sauce.
  • Fresh dill (optional) – adds herbal freshness.
  • Salt, pepper, red pepper flakes (optional) – for seasoning.

How to Make Creamy Miso Butter Beans

  1. Sauté the aromatics
    Heat olive oil in a large skillet over medium-high heat. Add sliced shallots and cook for 3–5 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.
  2. Add beans and miso
    Pour in butter beans, vegetable stock, and white miso paste. Stir well until miso dissolves. Simmer for 10 minutes to allow flavors to blend and liquid to reduce slightly.
  3. Make it creamy
    Stir in cream (or coconut cream) and simmer for another 5 minutes until the sauce thickens.
  4. Finish with greens & lemon
    Add baby spinach, salt, and pepper. Stir until spinach just wilts. Remove from heat and stir in lemon juice.
  5. Serve & enjoy

Instructions:

  2. Stir in garlic and cook for 30 seconds.
  3. Add butter beans, vegetable stock, and miso paste. Stir to dissolve miso and simmer for 10 minutes.
  4. Stir in cream and cook 5 minutes more until thickened.
  5. Add spinach, salt, and pepper. Cook until spinach wilts, then remove from heat and stir in lemon juice.
  6. Garnish with dill if desired and serve with bread.
